Foraged Blackberry Jam

There's something truly special about creating your own homemade jams, and the joy of sharing them with your loved ones is unparalleled. Turn your hedgerow finds into delicious jams to enjoy over the coming months.

You will need:
1kg blackberries
600g sugar
Juice of 1 lemon

Equipment: Preserving pan, wooden spoon, sterile jars and lids.

Method: Heat the jars in a hot oven at 220c. Wash the berries in a bowl of water with a pinch of salt. This helps rid the fruit of any bugs. Add the fruit to the pan with the lemon juice, cook gently until the fruit breaks down. Add the sugar and bring to a rolling boil until it reaches the setting point. Jar, lid and enjoy!
