Autumn in the Hedgerows — A New Forest Forager’s Journal

Today the wind carried a quiet message: autumn has arrived, soft and sure. The morning held that first delicate chill, a welcome contrast to the heavy heat of the past few months. I could almost hear my garden breathe a sigh of relief after so much struggle and survival; the grass seems to have found a new lease of life.

Across the lanes and footpaths, the hedgerows are glowing reds, yellows, purples, blues: wild damsons, rosehips, hawthorn berries, blackthorn and blackberries. These fruits are the backbone of traditional British hedgerow foraging, offering nourishment for wildlife and inspiration for anyone who loves wild food, jam‑making and small‑batch preserves.

Walking through the woods, I marvel at the turning leaves, each day a blessing before the nights begin to draw in. Autumn always feels like an invitation to gather, to savour, to bottle the season. Below are the hedgerow recipes I’m making this week, perfect for anyone searching for hedgerow jam recipes, wild fruit ketchup, or traditional British preserves.


 Hedgerow Preserves for Early Autumn

 


Blackberry Jam (Hedgerow Classic)

A deep, inky jam that captures the wildness of September.

Ingredients

1kg blackberries

550–650g sugar

Juice + zest of 1 lemon

Pinch of salt

Optional: 1 grated apple (extra pectin)

Method

Macerate berries, sugar and lemon for 30–60 minutes.

Bring to a boil; cook 12–18 minutes.

Test the set on a chilled plate.

Stir in salt.

Jar hot.


Damson Extra Jam

Sharp, plummy and beautifully old‑fashioned.

Ingredients

1kg damsons

150ml water

1kg sugar

Juice of 1 lemon

Method

Simmer damsons until soft, remove stones, add sugar and lemon; dissolve. Then boil to 105°C, Pot hot.


Sloe Ketchup

A deep, wine-dark ketchup with gentle spice.

Ingredients

1kg sloes

300ml red wine

300ml water

1 onion

2 garlic cloves

150g brown sugar

150ml cider vinegar

1 tsp cumin

1 tsp black pepper

1 tsp salt

Method

Simmer sloes with wine, water, onion & garlic; sieve to remove stones, add sugar, vinegar & spices; reduce to ketchup thickness. Bottle hot.


Hawthorn Berry Ketchup

Earthy, autumnal and perfect with game or cheese.

Ingredients

1kg hawthorn berries

500ml water

250ml cider vinegar

200g brown sugar

1 tsp allspice

1 tsp black pepper

1 tsp salt

Method

Simmer berries until soft.

Sieve, add vinegar, sugar & spices, reduce until glossy, Bottle hot.


Rosehip Syrup

Floral, vitamin-rich and perfect for cocktails or drizzling.

Ingredients

1kg rosehips

2 litres water

500g sugar per litre of strained liquid 

Method

Chop rosehips, simmer 15 minutes, strain overnight, then add the sugar, boil 5 minutes, always bottle hot.


Crab Apple Jelly

A sparkling, ruby-toned jelly with a sharp finish.

Ingredients

1kg crab apples

Water to cover, sugar (equal weight to juice)

Method

Simmer apples until soft. Strain overnight, add sugar, boil to 104–105°C, pot hot.

Quince Jelly

 

Perfumed, golden and beautifully old-world.

Ingredients

1kg quinces

Water to cover

Sugar (equal weight to juice)

Method

  1. Chop quinces. Then simmer until soft; strain overnight, add sugar; boil to set. aways pot hot.
