strawberry & champagne jam (225g)
This magical summer combination was invented while Jennifer was watching the semi-finals at Wimbledon, sipping champagne and enjoying a cream tea in the sun. This bright, sweet, delicate and happy taste makes it the ideal jam for the season.
Fresh strawberries are collected the same day they are picked and marinaded in champagne and sugar overnight before being slow cooked, by hand, in copper pans the very next day.
This jam is made in very small batches (8-10 jars at a time) with love and care and we add a further dash of champagnes is added at a (secret) critical point during the cooking process to boost the flavour.
Strawberry and champagne is the ultimate cream tea jam, the perfect accompaniment for scones and cream. This celebration in a jar is not to be eaten alone but preferably with friends with a glass of champagne in hand!
It's fabulous with buttered croissants for a perfect start to a beautiful summer day.
