Combining the beautiful, fresh raspberry with the foraged blossoms of elderflower (from the private woods surrounding the Naked Jam kitchen) creates wonderful floral flavours.
Elderflowers have to be picked at precisely the right time of day to maximise the flavour. Just after the dew has dried off and before the sun hits its zenith is when the elderflower is at its most aromatic. New Forest elderflowers look like clusters of white stars…and taste like pure refreshment.
Hand-cooked softly in copper pans, this delicacy is made in very small batches, with all the love and care that only a dedicated artisan jam maker can bring.
Naked raspberry and elderflower jam is glorious when used as a cake filler; it makes a heavenly Victoria sponge. Perfect for adding a touch of romance to your breakfast table, but also delicious stirred into soft ice cream.
The adventurous might try:
- Tempura-battered elderflower blooms...use this light floral jam as a dip. The result is a canapé that explodes in your mouth with a bouquet of floral flavour.
- Stir the jam into a warm Camembert cheese after baking.
