This strawberry extra jam is packed full of sweet, succulent fruit: it’s 57% fruit in fact, about twice the fruit content of most supermarket jams – that’s why it’s called ‘extra’.
It's the classic cream tea jam, wonderful on warm toast or in a light, Victoria sponge.
All the strawberries are collected the day they are picked, typically from the local family-run farm New Forest Fruit. The farm nestles between the Solent and the New Forest in an area with its very own microclimate, enhancing the flavour of the strawberries.
The strawberries are marinated in sugar overnight…and the magic starts as the fruit silently releases its flavour into the sugar in the darkness.
And the next day, small batches (less than 1.5kg at a time, around 8-10 jars) are slow-cooked by hand in copper pans then cooled in the jars. It’s this care and attention that makes the difference.
