These raspberries seem to have captured the summer itself in their sweet, delicate, tangy flesh. Each mouthful fills your senses. We believe the regal raspberry to be the royalty of the fruit family. And these raspberries – grown by our good friend Suzie on her organic farm in Kent – are bursting with fresh flavours locked in by the sun.
This ruby-red, world-championship-winning jam is cooked softly in very small batches because there is a very specific point at which the jam becomes ready. The artisan jam maker knows that a sudden aroma explosion means that the raspberry jam is ready to settle (so that the fruit is distributed evenly), before being poured warm into the jars for cooling. It’s a magical moment.
Enjoy it on everything from toast to cakes – ideal in Swiss rolls, coconut bakes and jam tarts.
The adventurous might try:
- Raspberry jam with warm brie, mustard, rocket salad leaves on multigrain (or other highly textured) fresh bread.
- Add to a vinaigrette (white wine vinegar, olive oil and a dash of mustard) for a stunning summer salad dressing.
