Seville oranges crown this the king of the marmalades. They may be too bitter to eat but ideal for making this really strong, sweet marmalade.

Legend has it that Seville marmalade - a firm favourite of connoisseurs - was invented in Scotland. And it has since become famously associated with Ian Fleming's James Bond, making it a real gentleman's favourite.

If we have it in stock, be quick because this has perhaps the shortest fruit season of them all.

We source our oranges from Seville's Gospa citrus organic farm, a 4th generation family business famous for its passion for excellence.

Each Seville orange is peeled and cut by hand. The fruit pulp is wrapped in muslin cloth and is suspended in its own juice for up to 48 hours.

This magnificent marmalade is hand-made in small batches, cooked in copper pans. Each batch is unique - the artisan jam maker knows there is no set time for cooking this marmalade, it's a question of watching the fruit responding to the heat and sugar and using your experience and judgement. This is an art.

Naturally this majestic marmalade is perfect for all breakfast tables, best spread generously on thick, warm toast.
