Mexican limes dance into the jar and brighten your day. This is a celebration of colour and taste just like a Mexican street party full of vivid colours. It wakes your taste buds with a bang!
This is no soft, clear jelly. You'll be spreading your toast with a layer of zingy, feisty, punchy fruit pieces that want to attack your taste buds. This is lime marmalade with attitude. It's 58% fruit and we use the whole fruit (except the pips!).
Mexican limes are hand selected at the market and sliced by hand before being left to mature for 48 hours in Kaffir lime leaves (often used in Thai recipes). This wakes up the lime and softens the peel. The limes are then slow-cooked in copper pans with warm sugar (pre-heated on a tray) for a clearer marmalade which preserves the fruit better.
Natural lime marmalade is darker, stronger and has far more texture than most artificially-coloured, clear jellies and preserved shop-bought products.
