grapefruit & ginger marmalade (225g)
Pink grapefruit (selected for it's fresh flavour and superb texture) is blended with vibrant Chinese ginger that has been peeled, sliced, poached in syrup and matured for three months. The result is a bright and funky artisan marmalade - one of our best-selling recipes - and its developing something of a cult following.
Hand-made in small batches, we use the whole grapefruit (bar the pips). We separate the fruit from the juice and wrap the flesh in muslin cloth before suspending the fruit in its juices overnight to soften the peel.
We then simmer the fruit for two hours before adding our syrup-poached ginger and sugar. The aroma is spectacular as the pink fruit mixture changes colour to become a yellow/orange. It looks striking and tastes remarkable.
Wonderous with your Sunday morning toast, it's a sensational complement to a champagne breakfast.
The adventurous might use grapefruit and ginger marmalade:
- With mascarpone as a sweet sauce.
- As a funky glaze for a tuna steak. A fabulous fish dish.
- By stirring it into capelli d'angelo pasta for an exotic desert.
